All About Me Series: Let’s Eat Healthy!

I had the honor of teaching elementary for over eighteen years. During that time, I witnessed many changes in curriculum. An important change seemed to be the contents of the food pyramid.

I find that it is important to realize that children receive their first formal lessons about food at school. Thus, I believe that teachers should not rely on the old food pyramid. Apparently, there are teachers that still use it!

The USDA has revised the food pyramid once before in 2005. They scrapped the pyramid all together in 2011 in favor of the My Plate design. What is a healthy diet?


“Eating a healthy diet is not about strict limitations, staying unrealistically thin, or depriving yourself of the foods you love.A healthy diet is one that helps maintain or improve your overall health. “A healthy diet provides the body with the essential nutrition: fluid, macronutrients, micronutrients, and adequate calories.“ Wikipedia

According to the Dietary Guidelines for Americans 2015–2020 , a healthy eatingplan:

  • Emphasizes fruits, vegetables, whole grains, and fat-free or low-fat milk and milk products.
  • Includes lean meats, poultry, fish, beans, eggs, and nuts.
  • Is low in saturated fats, trans fats, cholesterol, salt (sodium), and added sugars.

The Dietary Guidelines for Americans Trusted Source explain how much of each nutrient you should consume daily.

I believe that what you choose to eat is a very personal choice. Each one of us decides which type of diet to follow. Regardless of the diet you follow, you must still decide on how many calories you will consume.

I have chosen to be vegetarian. For me, it is the healthiest choice I can make at this time. I would encourage everyone to become vegetarian. Shortly after adopting a vegetarian diet I experienced various benefits: lost sixty pounds, improved my blood pressure, and improved my diabetes symptoms. Today, I no longer have to take any medicine for blood pressure or diabetes!

A vegetarian diet should include a diverse mix of fruits, vegetables, grains, healthy fats and proteins. To replace the protein provided by meat in your diet, include a variety of protein-rich plant foods like nuts, seeds, legumes, tempeh, tofu and seitan.” (according to Healthtime)

Every month I plan my meals for the month. This allows me to select nutritious, and healthy meals. It also makes it easier to create my grocery list, because I know exactly which ingredients I need for each meal. I enjoy prepping all of my produce as soon as I get them home. I also enjoy gathering all of the ingredients for a given recipe. I find it both challenging, and fun! I love to share my favorite recipes on this blog.

I encourage you to try a healthier lifestyle. You may choose to implement healthier choices at your own pace. I would like to challenge you to always continue improving your healthy lifestyle, for you deserve the best!
