Aimee’s Watermelon Salad

Last night I came up with my own version of a Watermelon Salad. It is inspired by Cathy Fisher’s recipe, but I added more ingredients. I hope this recipe inspires you to create your own delicious salad. I had it for dinner, and I must say that it is refreshingly delicious!


2 lettuce hearts, chopped

8 oz fresh spinach (1/2 bag)

1 yellow onion, chopped

1 cucumber, chopped

8 oz grape tomatoes, sliced in half

12 oz baby carrots (1/2 bag), cut into 1/4” pieces

1/2 seedless watermelon, cut into 1” pieces


  1. Wash all your vegetables.
  2. Begin cutting all your ingredients: lettuce, spinach, onion, cucumber, grape tomatoes, baby carrots, and the watermelon. In an extra large bowl, add each ingredient as you finish cutting it.
  3. Mix up all the ingredients until well incorporated.

Ingredients that you might add:

I topped my salad with an avocado.

You may also add your favorite canned beans (drained & rinsed). You may wish to incorporate them into the salad, or just add them as a topping with each serving.

Recipe makes 8 servings.
