Last night I came up with my own version of a Watermelon Salad. It is inspired by Cathy Fisher’s recipe, but I added more ingredients. I hope this recipe inspires you to create your own delicious salad. I had it for dinner, and I must say that it is refreshingly delicious!
2 lettuce hearts, chopped
8 oz fresh spinach (1/2 bag)
1 yellow onion, chopped
1 cucumber, chopped
8 oz grape tomatoes, sliced in half
12 oz baby carrots (1/2 bag), cut into 1/4” pieces
1/2 seedless watermelon, cut into 1” pieces
- Wash all your vegetables.
- Begin cutting all your ingredients: lettuce, spinach, onion, cucumber, grape tomatoes, baby carrots, and the watermelon. In an extra large bowl, add each ingredient as you finish cutting it.
- Mix up all the ingredients until well incorporated.
Ingredients that you might add:
I topped my salad with an avocado.
You may also add your favorite canned beans (drained & rinsed). You may wish to incorporate them into the salad, or just add them as a topping with each serving.
Recipe makes 8 servings.
