Spinach Dijon Dressing

This recipe is from the cookbook Straight Up Food, by Cathy Fisher. I made it to have with the Watermelon Salad. It was incredibly simple to make. It packs a great combination of flavors. My son gave it his seal of approval!

Ingredients:


2 ounces of spinach leaves (1cup chopped and packed)


1/4 medium ripe avocado


1 tbs Dijon mustard


1 green onion (white & green parts), sliced


1 clove of garlic

Directions:

  1. Place all the ingredients ( spinach, avocado, water, mustard, green onion, & garlic) into a blender, and blend until smooth. Add a little water as needed.

You can use this salad dressing on almost any of your favorite salads. I hope that you will try this recipe. I stored mine in a mason jar in the refrigerator. It was even better the next day!

I loved the creaminess of this dressing. It comes out a bright green color. I added a couple of ingredients:

2 tbs Dijon mustard

1 tbs lime juice

1/2 tsp garlic powder

4 ounces spinach

2 cloves garlic

1/2 yellow onion

1 whole avocado

You can use this salad dressing on almost any of your favorite salads. I hope that you will try this recipe. I stored mine in a mason jar in the refrigerator. It was even better the next day!
