MERRY CHRISTMAS! This year has been challenging in many ways. We have all been tested, and asked to constantly adjust to many adverse conditions. I am humbled by how my son, and daughte-in-law have perseveredagainst all of it! They are professional professors at local universities, and they always have time for me.
I wanted to thank them by making an entire Vegan Christmas Menu. I spent the last three days in the kitchen with my best friend Collette (AKA my daughte-in-law’s mom/MOM #2, as my son says). We made many delicious new Vegan recipes. You can find them all in this blog, as part of the CHRISTMAS 2020: MENU PREP SERIES.
Collette and I decorated the whole living room. We served our delicious Christmas Menu in the Buffet Style. Everyone filled their plates! We sat together as a family to a very peaceful and satisfying dinner. Before we knew it, all the plates were empty. I knew that we had been successful when I noticed some people getting some seconds! Here are some favorites: Beet Hummus, Avocado Pesto Stuffed Tomatoes (served with Garlic Baked Baguettes & Pumpernickel Bread), and Hummus Cucumber Bites with Pickled Ginger.
We took a break to open presents. I was so excited to see that Santa thought that we have all been GOOD this year!

After our meal we served dessert. Chocolate Mousse, and Persimmon Cake. There were also Snow Ball cookies, Oatmeal cookies, Chocolate cookies, and Cafe Con Leche.
